Pulled Chicken and a Super Bowl Surprise

Speaking of traditions, I think Luke and I are on to something great.  Perhaps even something SUPER.  On this, the day of the Super Bowl, we at Bashful Bao are happy to present our very own “Brady Bunny.”

Maybe we’ll dress her up every year and hope that her fuzzy cuteness will carry Luke’s football team all the way. We’re going to a party at Luke’s boss’s house to watch and hopefully see the Patriots win.

In honor of today being the Super Bowl, I’m posting about meat.  Pulled meat is probably my favorite kind of meat.  It’s slow cooked to tender perfection and makes everything taste better.  I’ve made pulled pork.  So here’s its counterpart.  Stay tuned for an awesome idea as to what to do with leftover pulled meat, besides eat it out of the slow cooker with a big spoon.  What?  Just me?

Sweet & Smoky Pulled Chicken

Adapted from The Sweets Life

2 lbs boneless, skinless chicken breasts
1/2 red onion, chopped
3 cloves garlic
1 (15 oz) can fire roasted diced tomatoes, drained
1 chipotle pepper in adobo sauce, finely chopped
2 tbsp brown sugar
juice of 1 lime

Add the chicken to the slow cooker.
With a blender or a food processor, blend the remaining ingredients until smooth. Pour mixture over chicken.
Cook on low for 8-10 hours. Shred using 2 forks and serve on sandwich buns.
